Calzones

Calzones, using a Italian seasoned fresh sausage we made last week. Roasted tomatoes, local greens, mushrooms, mozzarella, and a goat cheese that was just a tad too pungent for what I was looking for- but the wife loved it.

All about beets.

Love beets. Here roasted and quickly pickled then dressed in a bit of thyme infused olive oil, with a plain awesome goat cheese. Yum.

Smoked Fish Cake with Beet Salad

Goat Cheese and sliced roasted beets, and a cake made with smoked fish, corn, red pepper, onion, a bit of garlic and some other stuff. Ah! Also a roasted cherry tomato, basil concoction… We’ll call it a compote- kinda.

Some of my favorite homemade pizza are veggie. This one has a base of Homemade Pesto, thinly sliced tomatoes, fresh mozzarella, and grated Parm.
